A clearer list. More useful decisions.

Wine list consultancy for your hospitality business.

Make your wine list easier to explain, organise and assess. Sergio Rubí works with your current list, menu and available data to turn a specific question into practical next steps.

Sergio explaining a wine

Start with the decision you need to make.

Is the list difficult for guests to navigate? Are descriptions hard for staff to use? Do you need a clearer view of your pricing or by-the-glass offer? We agree the question before deciding what work is needed.

What we need from you

Your current wine list, menu and the decision you want help with. Cost, serving-size and sales information is requested only where relevant to the agreed analysis. Without reliable financial data, findings focus on clarity and structure rather than estimated margins or sales.

A defined scope and a clear quote

The proposal confirms the scope, information required, deliverables, timetable and total price. Graphic design, printing, stock counts, full supplier negotiation and changes to your till system are separate from these services.

If training or earlier work has already covered part of the review, the next proposal accounts for that work instead of charging for it again. You remain responsible for approving prices, purchases and implementation.

Frequently asked questions

Can we combine this with staff training?

Yes, when useful. A review addresses the list; hospitality training helps staff use it in conversations with guests. We agree distinct deliverables and avoid duplicating work.

Do you guarantee higher margins or sales?

No. Recommendations depend on the information available and your operation. The review gives you documented decisions to assess, not a guaranteed commercial result.

Can we work remotely?

Document review and discussions can be arranged remotely. If an on-site visit is needed, availability and travel are agreed separately.

Should I send confidential cost sheets now?

Start with a short description of your question. We agree what information is needed and how to share it when defining the work.
